Join our teachers and Italian chefs Chiara and Marzia in our Taalhuis kitchen for a dive into Italian culture and cuisine. Learn how to prepare a traditional meal from southern Italy: busiate with pesto alle mandorle and sformato di melanzane (eggplant savory cake).
These dishes are part of the tradition of family dinners, where people gather to meet and enjoy good traditional food. Busiate is a type of pasta made with semolina. It is stretched like thick spaghetti and curled into a type of fusilli with the help of a stick. Typical of north-western Sicily, it is a fun pasta to make and very popular at family lunches, and the ‘cold’ sauce makes it a perfect dish for summer.
Lo sformato di melanzane (eggplant savory cake), another popular summer dish throughout southern Italy, uses aubergines as the main ingredient, as do countless other Italian summer dishes. Every family has its own “golden recipe,” and in this workshop, we will be cooking Marzia’s family recipe.

During this 2,5 hour workshop, you will get your hands dirty while making your own Italian meal. While you’re on the job, you’ll learn the necessary Italian cooking vocabulary and some interesting stories and anecdotes about traditional Italian and regional cuisine.
When the preparations are done, we’ll have an ‘aperitivo’ and set the table and taste a few starters. Then it’s time to taste this Italian comfort food and chat about Italian culture, cuisine, and language.
