How to make… gnocchi!

Taalhuis-festival-blues? Look back at Paolo’s gnocchi workshop and try it at home!
 
Ingredienti: 1 kg di patate (gialle) | 300 g di farina | sale
 
Per gli gnocchi lessate le patate per circa 30-40 minuti. Pelatele ancora calde e schiacciatele sulla farina. Aggiungete un pizzico di sale e impastate con le mani fino a ottenere un impasto morbido ma compatto. Prelevate una parte di impasto e stendetelo per ottenere dei filoncini spessi 2 centimetri. Ritagliate dei tocchetti dandolgi la tipica forma. Mano a mano che formate gli gnocchi di patate sistemateli su un vassoio foderato con un canovaccio leggermente infarinato, ben distanziati l’uno dall’altro. Cuocete gli gnocchi in acqua bollente salata.

For gnocchi boil the potatoes for about 30-40 minutes. Peel them while they’re still hot and crush them on the flour. Add a pinch of salt and knead with your hands until you get a soft but compact dough. Take a portion of dough and roll it out to get 2 cm thick loaves. Cut out the pieces, giving them the typical gnocchi shape. As you prepare the potato gnocchi, arrange them on a tray lined with a slightly floured cloth, well spaced from each other. Cook the gnocchi in boiling salted water.
